Spicy Turkey Meatloaf January 4, 2012

Well after eating and cooking all things bad, but soooo good for the better part of three weeks… I’m back. Decided on the recipes for the week, shopped and started yesterday. Had this meatloaf last night, truly can’t remember the last time I had meatloaf, seems so retro. But this one is delicious, and super low cal. Which considering my calorie intake over the holidays will be much appreciated by my body (although I may be the only one in the family enjoying the return of “light” cooking, those little ones, and some big, really enjoyed those hearty carb filled meals, not to mention the Christmas baking – all of which I very simply justified by saying “but I only make it once a year”), yet another side effect, came up with some delicious new treats which may just make it into the regular rotation…….enough already!!! Back to the meatloaf, yummy, easy, paired it with a nice salad, and managed to serve it 2 separate times throughout the evening as everyone’s schedule’s just didn’t work for a “everyone together family dinner”. Enjoy this one, we did.
