Steak Fajitas with Peppers and Onions November 20, 2011

This was Lance’s bright contribution to dinner when I took out steak (of which I am still drowning in from Nearly Neil), as he didn’t feel like just steak… so out came the fajitas (not to mention my obsession with Mexican food). Super simple, but I must say, the marinade for the meat was what made it excellent, really tasted like authentic Mexican, the only thing I would change is to add more onions next time. The leftover sauteed steak, peppers and onions tasted awesome in a grilled panini the next day for lunch (tasted much like a Philly CheeseSteak).
