I thought for sure this would be the one recipe so far where we all resorted to the Peanut Butter Sandwich, but I just had to try a really light version of a family favorite. This recipe was shocking, first of all, not counting baking time, I would have been hard pressed to have spent more than 5 minutes making this dish, and secondly, it tasted really good. Not gooey old fashioned Mac and Cheese we all grew up on, but a much lighter, less filling, and quite tasty updated version. Did I mention it took almost no time to make (yes I am still trying to get over that fact). Kids all loved it, didn’t say a word about it tasting different, most had 2 helpings, and it passed the Lance test. He actually asked half way through “Is this another one of your light meals?” to which I thought meant he hated it (he often says when I take all the fat out of a meal, I also take all the taste), but what he did mean was it somehow tasted lighter, not as heavy as the usual, and quite tasty. Will definitely make it again, you should give it a try.
