Lunch for kids October 24, 2011

Decided to break out a few favorites for lunch today for the kids and some of their friends. Homemade fries (in the deep fryer, so wrong, but worth it), homemade chicken strips (chicken breast, light mayo, and toasted panko, baked not fried, so right, much healthier), and something new, homemade mozzarella sticks. While they weren’t quite as good as the gooey calorie laden Costco variety, they were a close second, and easy. Just cut up some cheese strings, dipped in egg wash, then rolled in toasted panko, baked at 400 for about 10 minutes, keep a close eye on them, fine line between gooey and melted.

    Good job I didn’t know these were on the menu yesterday – I was brought up on home made french fries, or chips! Main food staple in my house growing up… I’d have knocked the kids out of the way for these 🙂
