This one was more of a combination of a couple of different recipes I had bookmarked. Turned out quite nice, the Panini was done on sourdough which apparently makes everything taste better, but it was the balsamic reduction that really made the sandwich special. Kids had a lesser version of what the adults had, but hubby and I devoured ours! Quite simple and light, would be good for a luncheon. The zucchini sticks were a big hit, tasted quite close to the White Spot version, except not fried, the calorie saving was worth the slight difference in taste.
On another note, this whole dinner experiment has an interesting new side effect. Hubby comes home on time far more often, even when he says he is going to be late…… he says” are you cooking one of THOSE dinners tonight? if you are, don’t tell me, I want it to be a surprise….”, and he is apparently sharing my recipes with the guys from work!

Wow, that’s look sooooo good. It’s funny how there are all these positive spin-offs from making that one change in your daily routine! You are such an inspiration to all of us….. did your kids actually eat the zucchini? And slather a balsamic reduction on anything and well…you know!
They tried it, Mac hated it, jake thought it was OK. but us adults, loved it. Good point about the balsamic…. gonna try it on something else soon.
